When it comes to effortless elegance, these caviar crisp canapés are a total win. I recently enjoyed a trip to London, where we dined in this stunning, yet totally fancy champagne bar. Of course, you can’t have a glass of fizz without something to snack on… and this is what they served us!
I would never have put caviar and crisps together (they’re on totally opposite ends of the gourmet spectrum – right?!) but it works so well. So, when I had a half used jar of caviar leftover from a recent dinner party, I decided to make my version of caviar-and-crisps, paired with chives and crème fraiche for the perfect party snack.
I used Elsinore Lumpfish Caviar, found in Waitrose, which is a deep black colour, with small pearls that are crunchy and crisp in texture – but you can really use any brand you like for this recipe!
Method
Follow these steps to make our Caviar Crisp Canapés
There really isn’t much to this recipe… It’s pretty much a quick assembly job! Lay out your chosen crisps on a serving platter. We recommend using lightly salted (or plain), thick-cut crisps to hold the toppings without becoming soggy. Kettle crisps work wonderfully for this.
Place a small dollop of crème fraiche onto each crisp. This provides a smooth, creamy base that balances the salty crunch of the crisps and the brininess of the caviar. Using a small spoon, carefully add a spoonful of caviar on top of the crème fraîche. Be gentle to avoid crushing the delicate pearls.
Top Tip: Use a wooden or mother-of-pearl spoon for your caviar but DO NOT use metal – this can cause the caviar to oxidise, causing it to lose some of its delicate flavours.
Sprinkle finely chopped chives over the top of each canapé. If you like, you can add a few lemon wedges to your caviar crisp platter, which guests can squeeze over the top for a little bit of extra flavour.
These caviar crisp canapés are best enjoyed immediately to avoid any soggy crisps.. Serve them with a glass of your favourite champagne or a crisp white wine of course!

Can You Make Caviar Crisps in Advance?
It’s best to assemble the canapés just before serving to keep the crisps from becoming soggy. However, you can prepare the ingredients (chop the chives, portion out the crème fraiche and caviar) in advance, and quickly assemble them when ready to serve.
