I was inspired to write after eating the most delicious courgette salad at Daylesford Farmshop in the Cotswolds this summer. This courgette salad is the perfect way to use up courgettes when they are in abundance, particularly those of the pale green or bright yellow variety.
The creamy dressing in this recipe pairs perfectly with tangy feta cheese and fresh garden herbs. We serve this salad alongside grilled chicken, salmon, or simply on its own as a light lunch. Pair with a dry and light sauvignon blanc or rose wine.

Method
Follow these steps to make our Grilled Courgette & Feta Salad
Slice your yellow and green courgette into quarters lengthwise, and then again in half if your courgettes are quite long. Add your lemon zest, olive oil, chopped chilli and grated garlic to a large bowl before adding your chopped courgettes. Season with salt and pepper. Toss the courgettes in the dressing with your hands and leave to marinade for 20 minutes before moving onto the next step.
Top tip: this marinade also works perfectly with grilled asparagus, salmon, and any other summer vegetables.
Heat a large cast iron skillet or griddle pan over high heat for 5 minutes before adding in your courgettes and any extra dressing. Cook the courgettes for a few minutes until light grill marks have formed. Turn over and repeat on the other side.
Top tip: If you are hosting friends and family in the summertime, BBQ your marinated courgettes for an extra touch of smokey flavour.
In the meantime, stir together your greek yoghurt, mayonnaise, finely chopped parsley, and lemon juice to make your courgette and feta salad dressing. Season with salt and pepper to taste. Set aside until serving.
When you are ready to serve your salad, arrange your chunky courgettes on a plate or platter. Drizzle over the dressing and top with crumbled feta cheese, halved sun-dried tomatoes, and finely chopped mint. And that’s it! Enjoy your courgette and feta salad alongside grilled chicken or salmon or for lunch during the week.
Top tip: use any leftover salad dressing on top of roasted vegetables for an easy midweek meal.
