We have an abundance of red chillies growing in the garden at the moment, and I’m on a mission not to let any go to waste. Hot honey with fresh chillies is the perfect solution!

It’s the perfect marriage of sweet and heat, and let me tell you, it can transform any dish into something extraordinary. Whether you’re drizzling it over your favourite pizza, spicing up a salad dressing, or adding a kick to your morning toast, hot honey is a game-changer.

It’s as easy as it sounds, plus, you’ll most likely have all of the ingredients to hand already. Read on for the full recipe!


Method

Follow these steps to make our Hot Honey With Fresh Chillies

1. Gently Heat the Honey & Chillies Together

Start by finely slicing your chillis of choice before adding them to a small saucepan with the honey. On a low-medium heat, gently warm your honey for 15-20 minutes. You do not want to simmer or boil the honey as it may catch and burn on the heat.

2. Taste & Strain Your Mixture

Once the timer is up, taste the honey. If it isn’t quite peppery/spicy enough for your liking, simmer for a further 5-10 minutes. When you’re happy with the mixture, take it off the stove. Before jarring the hot honey, you can strain it through a fine sieve to remove the chilli slices, or you can leave them in – it’s totally up to you! I like to leave a few slices in to make it look more homemade…

3. Add To a Jar & Enjoy!

Add your finished hot honey to a sterilised jar with an airtight lid. And that’s it! Store your fresh chilli hot honey in the fridge, and it should keep for up to three months. 

Top Tip: Any chilli slices left in the honey will rise to the top of the jar whilst the honey is still warm. Simply wait until the honey reaches room temperature (and becomes thick again) before stirring to evenly distribute the chillies.


What Other Flavours Can You Add To Your Hot Honey?

Honey is an incredible ingredient to play with. The intense sweetness isn’t just complimented by spice, but by an array of other flavours too. Next time, try infusing your honey with some of the following ingredients (using the same method above!):

  • Rosemary
  • Thyme
  • Cinnamon sticks
  • Lavender
  • Cloves
  • Star Anise 
  • Ginger

How To Use Hot Honey

Like you would a great hot sauce, hot honey can go on literally anything! Here’s a few ideas for you to try:

  • Drizzled over pizza
  • In stir fry sauces
  • Over salmon or fried chicken
  • In salad dressings (a classic honey-mustard dressing but with a kick is delish!)
  • Drizzled over a few scoops of good quality vanilla ice cream
  • In cocktails
  • With cheese – try with goats cheese or over the top of a baked camembert

What Type Of Chillies Should You Use?

You can use any type of chillies (no matter the colour) that you have on hand. Adjust the quantity based on your spice tolerance and the heat level of the chillies to suit you. We used red birds eye chillies, but you could also use:

  • Jalapeños
  • Serranos
  • Scotch Bonnets
  • Habaneros
  • Thai Peppers
  • Picantes
