Alright, let’s talk about a snack that’s basically a party in your mouth, sweet chilli sausage rolls. We recently made these for a festive get-together and a whole platter of 24 rolls were demolished in under 10 minutes – we aren’t joking!

These sweet chilli sausage rolls make a fantastic addition to party platters, picnics, or as a tasty snack. The combination of the succulent pork with the sweet and slightly spicy kick of the chilli sauce wrapped in flaky puff pastry is sure to be a crowd-pleaser. Plus, they cost almost nothing to make and come together in under an hour!

We used chilli jam in this recipe as it has a stickier quality when cooked, plus a stronger flavour. However, if you don’t have chilli jam on hand, classic sweet chilli sauce works just as well.

So, grab your apron and get ready to roll (pun intended)…


Method

Follow these steps to make our Sweet Chilli Sausage Roll Recipe

1. Prepare the Filling

Preheat your oven to 210°C (190°C for fan ovens). Start by removing the skins from each of your pork sausages and adding them to a large mixing bowl. Next, add 3 tablespoons of chilli jam (the other half we use in a later step), as well as your chilli flakes, smoked paprika, dried rosemary salt and pepper. Mix well until all the ingredients are evenly distributed.

2. Cut Pastry To Size

Next, roll out your sheet of pre-made puff pastry on non-stick baking paper. Cut the pastry in half lengthways. You can also use homemade puff pastry (show off!), just start this step with your pastry cut to a 35cm x 23cm sheet. Down the middle of each pastry sheet, spread a spoonful of chilli jam.

3. Assemble Your Sausage Rolls

Divide your sausage mixture in half. On top of your chilli jam, spoon one portion along the middle of each puff pastry sheet. Roll the pastry over the sausage meat, ensuring it is tightly sealed. Seal the edges with a fork and trim to make an even edge. Slice each log into twelve evenly-sized rolls and place on a lined baking tray. 

Top tip: freeze your sausage roll logs for around 10 minutes before slicing, it will make them less sticky and much easier to chop!

4. Garnish & Bake

Beat your egg and brush it over the top of each sausage roll (milk is a great alternative). This gives them a golden finish when baked. Next, sprinkle each sweet chilli sausage roll with flakey salt, sesame seeds, and additional chilli flakes. Bake them in your preheated oven for 15-18 minutes, or until golden brown and the pork is cooked through.

Top tip: if you’re not ready to enjoy your sweet chilli sausage rolls right away, simply pop them in the freezer and bake them at a later date

5. Enjoy!

Leave your spicy sausage rolls to cool slightly before transferring them to a platter or airtight containers for later use. They are perfect for snacking or as a delicious dinner party appetiser!

Top tip: extra sweet chilli chutney or sauce for dipping is never a bad idea!


Sweet Chilli Flavour Alternatives

These sweet chilli sausage rolls have a slight kick to them, so they might not be to everyone’s tastes. If that is the case, try these flavour alternatives:

  • Cheddar & Marmite: Add a tablespoon of marmite to your sausage meat and grate in some cheddar cheese. You can also add some cheese to the top of your rolls before baking for extra cheesy goodness!
  • Harissa & Lamb: Swap your pork meat for minced lamb along with some spices. Add a thin layer or harissa to your pastry before assembling your rolls and baking until golden brown.

Yes, you can experiment with different sausage meats to suit your taste. Plain chicken sausages work well, or use pork and apple sausages which add extra sweetness. Some supermarkets even do sweet chilli-flavoured sausages, which make this recipe even easier to make!

Yes, you can reheat leftover sausage rolls in the oven at a low temperature until they are warmed through. We would avoid using the microwave to warm up your sausage rolls, as it may make the pastry soggy.

Can I Prepare Sweet Chilli Sausage Rolls in Advance?

Absolutely! You can assemble the sweet chilli sausage rolls ahead of time and refrigerate them until you’re ready to bake. Alternatively, you can even freeze them before baking and then pop them in the oven just before your guests arrive.
