In this recipe, we’re taking the classic scone – a beloved staple in our household  – and combining it with the vibrant flavours of wild garlic, which is currently growing in abundance in our local woodland. 

Known for its pungent aroma and delicate flavour, wild garlic pairs perfectly with the sharp aged cheddar in these scones, which get even better when slathered in perfectly salted butter!

These wild garlic and cheese scones are perfect for brunch, posh picnics, or simply as a savory treat any time of the day – they are so delicious. Let’s dive into the recipe!


Method

Follow these steps to make our Wild Garlic & Cheese Scones

1. Combine the Flour, Butter, and Paprika

Start by preheating your oven to 200°C (fan).

Next, sift the self raising flour into a bowl, and add cubes of cold butter, as well as your smoked paprika and salt. Rub the butter cubes into the flour until the mixture resembles breadcrumbs and no large lumps of butter remain. This takes about 5 minutes altogether.

2. Mix in the Egg, Milk, Garlic, and Cheese

Once your flour and butter is combined, mix in your grated cheese and finely chopped wild garlic. Next, create a well in the mixture and add your egg, and 100 ml of the milk. Avoid adding any more at this stage as we want to avoid a super sticky mixture. Mix well to combine, until a rough dough has formed.

3. Knead & Shape the Scones

Lightly flour a clean work surface and tip out your dough. Using your hands or a rolling pin, press the dough down until it is about 1.5 – 2 cm thick. Use a cutter or a glass/lid and sharp knife to cut out your scones. 

Tip tip: Minimise how much you handle the scones at this stage – warm scone mixture may not retain their shape very well!

4. Brush With Milk & Bake

When your wild garlic scones have been shaped, place them on a non-stick baking tray and brush them lightly with the remaining milk (you could also use an egg wash for a darker colour). Finish with a final sprinkling of cheese before baking them in the oven for 10-12 minutes. 

5. Leave To Cool Before Digging in!

Once your scones have reached a gorgeous golden brown colour, take them out of the oven and leave to cool on a wire rack. They are best enjoyed slightly warm with a thick slather of salted butter or our Date & Nectarine Chutney, or with a bowl of warming soup!

How Long Do Wild Garlic Scones Keep For?

Our wild garlic and cheese scones are best enjoyed up to two days after baking. Store them in an airtight container at room temperature to maximise freshness, and pop them in the microwave for 15 seconds to warm them slightly before serving. If you won’t consume them all within two days, don’t hesitate to freeze a couple!

How Do I Store Leftover Scones?

If you have any leftover wild garlic scones, keep them in an airtight container at room temperature for up to 2 days. For longer storage, you can freeze the scones in a freezer bag or airtight container for up to 1 month. Thaw them at room temperature or reheat them in a preheated oven before serving.

Can I Use Shop-Bought Garlic Instead Of Wild Garlic?

Not really. If you’ve ever tried wild garlic, you’ll know that it has a very different flavour to standard garlic cloves, with a slightly onion-y profile and a much milder finish. Instead, try substituting wild garlic for finely chopped spring onions. However, keep in mind that the flavour profile may be slightly different.

Can I Use a Different Type Of Cheese in this Recipe?

Absolutely! Feel free to experiment with different types of cheese to suit your taste preferences. Sharp cheddar, Gruyère, Parmesan, or even a blend of cheeses can work wonderfully in this recipe. Goat’s cheese could also add a unique, tangy twist!
