If you’ve been exploring and experimenting with some of our dishes, you might have picked up on our slight obsession with courgettes. We love them in salads and side dishes, but recently used them to create these delicious canapes, which are an absolute flavour bomb!
Perfect for indoor parties and summer BBQs alike, these courgette rolls are quite eye-catching on a buffet spread, yet they’re surprisingly easy to prepare. If passion fruits aren’t available, or they aren’t in season right now, you can substitute with frozen pulp or finely diced mango.

Method
Follow these steps to make our Courgette Rolls With Ricotta & Passion Fruit
Slice the courgettes lengthwise, making them about 6 mm (½ in) thick. Arrange them in a big bowl and sprinkle them with a few pinches of sea salt. Toss them thoroughly. Let them sit for half an hour before draining any excess water. This step firms up the courgette slices, making them easier to grill later on. Once drained, lay out your courgette slices on a clean kitchen towel and gently pat them dry.
Heat a griddle pan (or a BBQ!) on a medium-high setting and cook the slices for 3-5 minutes on each side, or until they’re soft and get gorgeous grill marks. Let them cool.
Top tip: we prefer grilling our courgettes on the BBQ for a hit of smoky flavour!
In the meantime, place the ricotta in a bowl. Cut the passion fruits in half and remove the seeds and pulp from 2 of them, adding them to the ricotta. Stir in the basil, salt, and pepper. Taste and season to your liking.
To make your courgette rolls, add a tablespoon of the ricotta mixture at the end of each courgette slice. Roll it up, being careful not to let the mixture ooze out of the sides, before arranging the finished rolls on a serving platter or wooden board. Garnish your courgette rolls with an extra dollop of passion fruit pulp before serving!

Frequently Asked Questions
Can You Make the Courgette Rolls in Advance?
Unfortunately, you can’t make this recipe in advance. As the filling sits within the courgette roll it very slowly starts to come out of the bottom, which could get messy if left overnight.
If you’re wanting to prep some bits ahead, you can certainly grill the courgettes and prepare the filling ahead of time, and simply assemble when you’re ready to serve.
Can You Substitute the Passion Fruit For Something Else?
If passion fruits aren’t available, you can use frozen (but defrosted!) passion fruit pulp or very finely diced mango as a substitute. We also love to substitute the passion fruit for lemon zest and juice from time to time.
Can You Substitute the Ricotta With Something Else?
Ricotta can be substituted with other soft cheeses like goats cheese or cream cheese, depending on your preference. Goat’s cheese will add more of a savoury flavour, and may need loosening up with a splash of water in order to create the creamy filling, but is a super delicious choice if you’re a cheese lover.
