If you’re looking for a quick and easy dinner that’s bursting with flavour, this pasta with prawn and chorizo is a fantastic choice. Not only is it a crowd-pleaser, but it comes together in under 20 minutes with just a few ingredients.

Method
Follow these steps to make our Prawn & Chorizo Pasta
Start by boiling your linguini in heavily salted water in a pan. Cook your pasta according to the package instructions.
Whilst your pasta is cooking, get started on the rest of the ingredients. Start by adding a good glug of quality olive oil to a pan on medium, before adding in your chorizo and chilli flakes. Cook until slightly crisp and the oil has been released.
Top tip: if you’d like to at this stage, you can also add a finely chopped shallot and a few cloves of crushed garlic to the pan and cook until softened.
If your jumbo prawns are already cooked, simply add them to the pan and cook until warmed through. If your prawns are raw, cook until they are cooked all of the way through.
Once your chorizo and prawns are cooked through, add your linguini to the pan along with a dash of pasta water. Season with salt and pepper to taste, and add in a squeeze of lemon juice. Add in your rocket. Mix everything together until the pasta is coated with the saucy chorizo oil and the rocket leaves are slightly wilted.
Ladle your pasta into large pasta bowls and serve immediately with a wedge of lemon, a fresh crack of black pepper, and a sprinkling of grated parmesan cheese.
