January is always a bit quieter for me, both family and work-wise, and I’m definitely making the most of the slower-paced mornings. The most sacred part of my slow mornings is the preparation of a delicious breakfast – which often features this insane bacon and halloumi bagel. Naturally, I couldn’t resist sharing it with you!
The saltiness of the yummy halloumi and crispy streaky bacon is complemented perfectly by the smoky chipotle ketchup and creamy avocado. I’ve also included a handful of spinach so it feels somewhat healthy!!
The best bit? This ultimate halloumi breakfast bagel comes together in a flash. In less than 20 minutes, you can have a mouthwatering masterpiece that’s perfect for lazy weekends or any morning when you want to start the day with something a little extra special.

Method
Follow these steps to make our The Ultimate Halloumi Bagel
Let’s start by preparing all the ingredients. Start by slicing your halloumi into fingers, around 1cm thick. Next, mash a ripe avocado with a pinch of salt and pepper until smooth and lump-free. Finally, make a deliciously tangy chipotle ketchup by combining 1 tablespoon of spicy chipotle paste and 3 tablespoons of ketchup.
Top Tip: You can actually buy ready made Chipotle ketchup, which I’d usually use instead of making my own. My favourite brand is the Sauce Shop Smoky Chipotle Ketchup – just delicious!
Start by frying your streaky bacon in a pan over medium high heat until slightly crispy around the edges. Set aside to cool. In the same frying pan (for extra delicious bacon-y flavour), fry your sliced halloumi for a few minutes on each side until golden brown.
Slice and toast your bagels until lightly browned. Whilst your bagels are still warm – load them up with all of your yummy toppings. On one slide, slather on a thick layer of your chipotle ketchup, and layer up with bacon. On the other side, spread a thick even layer of avocado, add a handful of spinach, and finish with a generous helping of halloumi. Pop the two sides together and serve immediately!

Can I Make the Halloumi Bagel in Advance?
If you have little ones in the house, a Saturday morning may not feel as calm and slow paced as mine – apologies for rubbing it in! BUT, you can make a few components ahead of time to ensure you still get to make a delicious halloumi bagel whilst in a rush.
Simply fry both the bacon and halloumi in an airtight container in the fridge. You can also mix up the chipotle ketchup in advance. The morning of, simply mash your avocado and assemble the bagel with your pre-prepped ingredients.
How Can I Make This Bagel Veggie?
Easy! Simply omit the streaky bacon, swapping it for a vegan/veggie fake-on, or instead use jarred roasted red peppers, or even a few grilled mushrooms for that same meaty feel.
What Can I Use Instead Of Bagels?
If you don’t have bagels on hand, don’t worry! This recipe works wonderfully with a few slices of toasted sourdough, ciabatta rolls, English muffins, or even inside a warm pitta bread.
How Do I Get the Best Texture For Halloumi?
It’s very common for people to overcook halloumi – in fact, that’s where the name ‘squeaky cheese’ comes from! It should not be squeaky when you bite into it – it should be soft and just starting to crisp.
To keep halloumi from becoming too rubbery, make sure to fry it until it’s just golden brown on each side. Overcooking can lead to a much tougher texture.
