Ingredients

Great vegan sandwich fillings are few and far between… Yes, you could grab some vegan cheese slices and call it a day but it’s certainly not going to leave you coming back for seconds! So, when thinking about some plant-based alternatives, it led me to coronation chicken – one of my all-time favourite sandwich fillings. But, with a delicious vegan twist. 

To make vegan coronation chicken, you could use plant-based ‘fake’ chicken pieces, but I instead opted for chickpeas. They soak up the curried-coronation flavour brilliantly, and add some cheap fiber to your lunch at the same time. For the vegan coronation chickpea dressing, I used a very classic recipe, but simply swapped the normal mayonnaise for Hellman’s Plant-Based Mayo instead – you honestly wouldn’t know the difference!

Serve this delicious vegan coronation chickpea filler between two slices of your favourite bread, on a hot jacket potato, or on top of a salad. It’s also one of those recipes that gets better the longer it sits – perfect for meal prep. Read on for the full recipe!


Method

Follow these steps to make our Vegan Coronation Chicken

1. Make the Coronation Dressing

This part couldn’t be easier – in a mixing bowl, add in your plant-based mayonnaise, the mango chutney, curry powder, cinnamon, and mix well to combine. Taste and adjust the seasonings as you wish – I like a touch more curry powder in mine. 

2. Toss in Your Chickpeas & Sultanas

Drain your chickpeas, rinse under water, shake off, and add to your coronation dressing, along with a handful of sultanas. Mix well to combine – and you’re done! 

If you have time, leave your vegan coronation chickpeas to sit in the dressing for half an hour or so. This gives the chickpeas and sultanas time to soak in the beautiful curried flavours!

3. Serve Or Pop Into a Container For Later

Serve your delicious coronation chickpeas in a sandwich, on a salad, or in a jacket potato for a quick but plant-packed lunch. Or, if you’re not using it straight away, keep it in an airtight container and enjoy throughout the week. Because this coronation chicken alternative isn’t made with meat or dairy products, it lasts brilliantly in the fridge for up to 5 days.


How To Serve Vegan Coronation Chicken

Need some serving inspiration? Here are a few of our favourite ways to enjoy our vegan alternative to coronation chicken:

  • In a sandwich with crisp spinach, rocket, or cucumber slices
  • On top of a jacket potato with extra mango chutney
  • With fluffy white basmati rice or even a naan bread
  • Spoon over a simple green salad with toasted almonds, and torn coriander
  • As part of a picnic spread with plant-based sausage rolls and quiches
  • Or just eaten straight from the bowl with a spoon (no judgement…)
