As the sunny days of spring are just around the corner (which means BBQ season won’t be long after), we thought that it would be the perfect time to share our go-to fruit salad recipe. 

We’ve paired juicy watermelon with seasonal summer berries, all tossed together with fresh mint, and a honey and lime dressing – it really is the perfect dish to elevate any summer gathering or to enjoy as a lighter desert option during the week. 

What’s more, you can prepare all of the chopped fruit ahead of time and simply assemble the salad 5 minutes before serving! Read on for the full watermelon fruit salad recipe.


Method

Follow these steps to make our Watermelon Fruit Salad With Lime & Mint Dressing

1. Cut Your Watermelon Into Cubes

Start by preparing your watermelon. After removing the skin, cut the watermelon into flat slabs and dice into 2cm cubes. Place the watermelon cubes into a colander over the sink to drain any excess moisture whilst you prep the other ingredients.

2. Combine the Fruit Together

Remove the stones and halve your cherries, and quarter your strawberries. Add these to a bowl along with your raspberries. Once drained, add the watermelon cubes to the same bowl and give everything a quick toss!

3. Make the Dressing

To assemble your dressing, whisk together the lime juice and honey. Pour this over your fruit salad and toss well to get an even coating on all the fruit.

Top Tip: If you’re preparing the dressing in advance, they may separate even if mixed, so may need another stir before adding to the fruit salad. 

4. Garnish & Enjoy!

To finish your watermelon fruit salad, finely chop a large handful of mint and sprinkle evenly over the fruit. Garnish the finished watermelon salad with sprigs of mint and a few whole cherries. Enjoy on its own or alongside homemade meringues!


Can You Prep the Watermelon Fruit Salad in Advance?

Yes and no. To keep everything fresh and crunchy (and prevent soggy mint leaves!), we’d recommend only preparing the fruits in advance. This includes chopping the watermelon, cutting the strawberries, and pitting & halving the cherries. These can be kept in the fridge overnight and tossed with the dressing and fresh mint leaves when you are ready to serve!

 

What Should You Serve the Watermelon Salad With?

Although we’re certain there won’t be any salad left after serving this to your guests, if you have any leftovers, they can be served alongside:

  • Homemade meringues
  • Pancakes or waffles
  • Layered with Greek yoghurt
  • Ice cream (chocolate or vanilla would work best!)
  • … or on its own as a light dessert option!

How Long Does the Salad Keep For?

This fruit salad is best enjoyed fresh on the day it is made, as the fruits may begin to lose their texture and vibrant colour over time. However, if stored properly in an airtight container in the refrigerator, it can last for up to 1-2 days.

Just keep in mind that some fruits may release juices over time, so you may need to give it a quick toss and add a few more fresh mint leaves to the salad before serving

What Can I Use Instead Of Honey?

If you don’t have honey on hand, you can substitute it with maple syrup, agave nectar, or even just granulated sugar, adjusting the sweetness to taste. If you don’t want an overly-sweet salad, you can skip the honey altogether.

Can I Use Bottled Lime Juice Over Fresh Lime Juice?

Whilst fresh lime juice is preferred for its vibrant flavour, you can use bottled lime juice as a convenient alternative. Just be sure to adjust the quantities to taste, as bottled lime juice may be more concentrated than freshly squeezed lime juice!

Which Other Fruits Work Well in Fruit Salad?

Whilst watermelon and cherries are the base of this salad, you can swap out the strawberries and raspberries for your choice of red fruits. To maintain the vibrant red colour, choose from:

  • Peaches
  • Pomegranate seeds
  • Blueberries
  • Red grapes
  • Blackberries
