Anything that takes under twenty minutes and just a few ingredients to make is a winner in my eyes, especially when it comes to hosting for a crowd. These blackberry and goats cheese tartlets are the perfect bite-sized nibble for a Christmas do, dinner party, or for a gathering of any sorts. 

Blackberries have just come into season (hello Autumn!), so I wanted to keep them the centre of attention in this dish, so pairing them with a creamy, mild goats cheese works perfectly. Saying that, you could also swap the goats cheese for a bolder counterpart, such as stilton or even an extra mature cheddar if you have it to hand!

Method

Follow these steps to make our Blackberry & Goats Cheese Tartlets

1. Cut Your Puff Pastry To Size

Preheat your oven to 200°C. Start by rolling out your puff pastry and cutting into equal inch-sized squares. You should end up with around 30-36 pieces. Lay them out onto parchment paper, before moving onto the next step.

Top tip: Leave your puff pastry in the fridge right up until the last moment – colder pastry is much easier to cut and handle!

2. Add the Toppings

Next, add a crumble of goats cheese into the centre of each puff pastry square. Then, slice your blackberries into thirds or quarters (depending on how big they are), before laying a slice on top of each square and sprinkling with flaky sea salt.

3. Bake Until Golden

Carefully brush the edges of each puff pastry square with milk or a beaten egg (to create that beautiful finish!), before baking in the oven for 10-12 minutes, or until puffed up and golden brown.

4. Garnish, and Serve Immediately

Once your goats cheese tartlets are out of the oven, leave them to cool on the baking tray. Once cool, transfer them to a serving platter and garnish with fresh thyme leaves. Enjoy!
