When it comes to entertaining, puff pastry is my not-so-secret weapon – quick, cheap, and whatever you make with it is always a crowd-pleaser. So, when I needed a delicious veggie option for a buffet I was attending, I whipped up these gorgeous spiced red onion tarts, and they didn’t disappoint!

Picture golden squares of puff pastry topped with sticky mango chutney, pretty rings of red onion, and a fragrant sprinkle of warming spices. The best bit? This easy recipe is super quick to make – under half an hour – and makes 24 tarts, which is perfect for feeding a large group.

Method

Follow these steps to make our Spiced Red Onion Tarts

1. Prepare Your Pastry Base

Preheat your oven to 200°C (180°C fan) and line a baking tray with baking paper. Roll out your ready-rolled puff pastry and use a sharp knife to cut 24 even squares (fold the pastry in half a few times for cutting guidelines!.

Place the squares on your baking tray with a bit of space between each. Using the tip of a knife, lightly score a border about ½ cm in from the edges of each square (be careful not to cut all the way through) – this will help create a beautiful raised crust while the centre stays flat for the filling.

2. Add the Toppings

Peel your red onions and slice into thin rings – about 0.5 cm thick (a mandoline is handy here, but a sharp knife works just fine). Spoon about a teaspoon of mango chutney into the centre of each pastry square, spreading it gently within the scored border. Add a slice of red onion on top of the mango chutney, ensuring it is within the border of the pastry square.

3. Make Your Spice Mix

Mix the turmeric, cumin, and garam masala in a small bowl. Sprinkle a pinch of the spice blend on each puff pastry square for even more deliciously Indian flavour.

4. Egg Wash & Bake

Beat the egg and brush it lightly along the scored edges of each pastry square to encourage a golden, flaky crust. Sprinkle a little flakey sea salt and nigella seeds to garnish.

Place the Indian tarts in the oven and bake for 15 minutes, or until the pastry is golden and puffed around the edges. The onions should be slightly softened, and your kitchen will smell absolutely divine!

5. Add To a Serving Platter & Dig In!

Whilst your spiced red onion tarts are still warm, assemble them on your favourite serving platter. Garnish with a handful of pomegranate seeds (and perhaps even some chopped coriander, if you have it) for a pop of colour. Enjoy!
