The Basics – Making Sausage Rolls at Home

Making homemade sausage rolls is honestly much easier than you might think- and way more fun when you get creative with the flavours. Here’s a simple step-by-step method that is super easy to adapt to different sausage roll flavour combinations:

  1. Prep the sausage meat – Take your sausages out of their casings and pop the meat in a bowl. Add herbs, spices, cheese, or anything else to boost the flavour.
  2. Assemble the rolls – Roll out a sheet of ready-made puff pastry and cut it in half lengthways. Spoon your sausage mixture down the centre of each strip, then fold the pastry over and seal the edge with a fork.
  3. Cut and finish – Slice into individual rolls, brush with egg wash, and sprinkle with your toppings of choice – flaky salt, sesame seeds, poppy seeds, dried herbs… go wild!
  4. Bake and enjoy – Bake at 200°C (180°C fan) for 15–20 minutes, or until golden, crisp, and sizzling.

 

Top tip: Don’t stress about making your own puff pastry – seriously. Shop-bought is faster, flakier, and perfect for sausage rolls. Go for the ready-rolled kind to make life even easier!

An absolute staple in our house at Christmas time! Simply mix your sausage meat with a few generous dollops of cranberry sauce and finely chopped rosemary, and layer slices of brie cheese on top before assembling your rolls. Serve straight out of the oven for melty cheese deliciousness.

2. Caramelised Onion Sausage Rolls

A more traditional choice, but never boring. Fold a couple of tablespoons of sticky balsamic onion chutney into your sausage meat along with finely chopped parsley or thyme. The chutney adds sweetness and tang, pairing beautifully with the herby pork. Serve with extra chutney for dipping!
