I’m officially crowning myself the queen of sausage rolls – I love to whip up a batch whenever I’m hosting guests and seem to be making a load every other week at this point! But here’s the thing… a lot of my go-to sausage roll recipes tend to lean into those wintery, comforting flavours – like my beloved Brie & Cranberry Sausage Rolls, perfect for Christmas party platters and chilly nights in. Delicious? Yes. But ideal for the warmer months? Not so much.
Allow me to introduce you to the perfect flavour for the warmer months: Cheddar & Spring Onion Sausage Rolls. Light, punchy, golden, and packed with oniony flavour – these are the perfect bite for picnics, parties, or a cheeky little fridge nibble when you’re between Zoom calls (we won’t tell!).
So, if you’re looking for a seasonal twist on a classic, or just a simple crowd-pleaser that can be assembled in less than half an hour, read on for the full recipe.
Method
Follow these steps to make our Cheese & Onion Sausage Rolls
Preheat your oven to 200°C. Start by removing the sausage meat from its casing and adding to a large mixing bowl alongside 3-4 finely chopped spring onions, 75g of grated aged cheddar cheese, as well as dried thyme, rosemary, sage, and a big pinch of salt. Mix well until everything is evenly distributed.
Lay out your sheet of ready-rolled puff pastry onto a lightly floured board or work surface. Using a sharp knife, slice the pastry in half lengthways, leaving you with two long rectangles of puff pastry. After wetting your hands (this helps to prevent filling sticking to you), take half of your sausage roll mixture and shape to form a long log in the middle of one of the puff pastry sheets. Repeat for the second puff pastry sheet.
Once you’ve added the meat to the middle of your pastry, carefully roll the pastry around the filling. Lightly egg wash one of the edges and press down with a fork to seal shut, before slicing into individual rolls – we managed to create 12 rolls. Give each roll a quick egg wash, before sprinkling with flaky sea salt (we used Malton salt!) and sesame seeds if you have them on hand.
Line a large baking sheet with grease-proof paper, lay out your finished cheese & onion sausage rolls, and bake them in your preheated oven for around 20 minutes, or until golden brown. Enjoy straight out of the oven!

Yes, absolutely! If you don’t have spring onions to hand, very finely chopped white or red onion would also work. If you really wanted to get creative with your flavours, you could even use a handful of wild garlic as a substitute for spring onions. Because they are from the same family of plants, wild garlic still offers that bright oniony flavour, with a hint of garlic.
Can I Use a Different Type Of Cheese?
Definitely – we love experimenting with different flavour combinations! Aged cheddar brings a lovely sharpness, but you could swap in Red Leicester, crumbled feta, or even a bit of Gruyère if you’re feeling bougie. Just stick to hard cheeses so the filling holds together.
How Should You Store Cheese & Onion Sausage Rolls?
You can either store your cheese and onion rolls in the fridge or freezer, depending on when you plan to eat them:
- Fridge – Once baked, these sausage rolls can be stored in an airtight container in the fridge for up to 3 days. Allow them to come to room temperature before digging in.
- Freezer – Freeze them before baking and they’ll bake like they are freshly made! Just assemble the rolls as outlined above, place on a tray to freeze individually, then pop them into a bag or container. Bake straight from frozen – just add an extra 5-10 mins to the cooking time.
What About Reheating?
You can absolutely reheat your rolls – and when done properly, they’ll taste just as good! To heat your cheddar & onion rolls, simply pop them in a preheated oven at 180°C for about 10 minutes until crispy and hot – enjoy straight away. Avoid the microwave unless you’re into soggy pastry (no judgement though!).
