  • 100g chorizo sausage
  • 50g red pepper
  • 2 eggs
  • 2-3 garlic cloves
  • 3 teaspoon smoked paprika

  • 1 teaspoon cayenne pepper

  • Flaky salt
  • Black pepper

When the weather turns chilly, I want nothing more than to snuggle on the sofa with my cat and a great film on… not forgetting a plate of still warm sausage rolls just waiting to be devoured. That is precisely what I did last weekend, so I thought I’d share the delicious sausage roll recipe that accompanied me!

These chorizo sausage rolls are the perfect blend of sweet and spicy, whilst still holding true to the porky-buttery-flaky rolls that we all know and love. What’s more, they can be thrown together in half an hour with a pack of sausages, a few spices, and shop-bought puff pastry (what a godsend!). They are certainly going to be a staple for those wintery weekends at home – read on for the full recipe. 


Method

Follow these steps to make our Chorizo Sausage Rolls

1. Mix Up the Chorizo Filling

Preheat your oven to 210°C (or 190°C for fan ovens). Start by removing the sausage meat from their casings and adding them to a bowl, alongside finely diced chorizo and red pepper. Next, add your seasonings – the garlic, smoked paprika, oregano, cayenne pepper, and cumin. Finish with a big pinch of salt and pepper, and add an egg to help the mixture bind together. Mix well.

2. Cut the Sheets Of Puff Pastry To Size

Roll out your pre-made puff pastry and cut in half lengthways, so that you are left with two long rectangles. Using a rolling pin, roll the pastry to ever so slightly increase the width of each rectangle – this will help us pack in more chorizo filling later on!

 

3. Assemble the Chorizo Sausage Rolls

Now that your puff pastry is cut to size, let’s assemble the rolls! On each pastry rectangle, add half of your sausage-chorizo mixture. Smooth it out into a long, thin sausage. Then, fold the pastry over the sausage meat, ensuring it is tightly sealed. Seal the edges with a fork and trim to make a neat edge. Pop the rolls in the freezer for 5 minutes to firm up (this will make them much easier to slice!).

Top Tip: Wet your hands before handling the sausage roll filling as this will prevent the mixture sticking to your hands!

4. Cut To Size, Egg Wash & Bake

Once your sausage roll logs are out of the freezer, chop each log into 12 slices, leaving you with 24 miniature sausage rolls. You can make them larger if you like, but we prefer them bite-sized. Place them on a baking tray lined with parchment, before giving them an egg wash, and a final sprinkling of salt and pepper. Bake them in your preheated oven for 15-18 minutes, or until golden brown.

5. Pop On a Platter & Dig in!

Once your chorizo sausage rolls are out of the oven, pop them onto a serving platter of your choice and enjoy whilst still warm! For an extra ‘wow’ factor, serve them with a homemade chorizo mayonnaise for dipping.

Frequently Asked Questions

Can You Make the Chorizo Sausage Rolls Ahead Of Time?

The sausage rolls will keep for up to two days in an airtight container in the fridge. However, if you want to enjoy them fresh (and deliciously warm), then you can freeze them before baking!

Once you’ve assembled and cut the rolls, freeze them in a single layer on a baking sheet. Once they’ve firmed up, transfer them to a freezer-safe bag. When you’re ready to enjoy, just pop them straight into the oven (no defrosting needed!) and add a couple of minutes to the baking time.

Can I Make Larger Sausage Rolls Instead Of Bite-Sized Ones?

Definitely! If you prefer a heartier roll for posh picnics or quick lunches, you can cut the dough and sausage mixture into larger portions. Just remember to adjust the baking time accordingly, as bigger rolls may need an extra few minutes to cook through.

Can I Use Homemade Puff Pastry?

You show off!! While store-bought puff pastry makes this recipe a breeze, using homemade will make the rolls even flakier and more buttery. Just keep in mind that it will add more prep time to the recipe (obviously).
