It’s been a while since I last whipped up a new sausage roll recipe, but now that the nights are drawing in, the weather’s getting colder, and the Christmas tree is up (yep, I’m that person), I’m craving them all over again.

Plain sausage rolls just don’t happen in this house – to me, they’re the perfect blank canvas begging to be jazzed up with extra flavour. So, to celebrate the festive season, I’ve created these tangy, sweet, and utterly scrumptious stilton sausage rolls.

Now, I know blue cheese can divide opinions, but trust me on this one – the stilton hits just the right note. You still get that gorgeous tang, but it’s beautifully balanced, even for the blue cheese skeptics. In fact, I’d bet they’ll be going back for seconds… my usually-fussy sister-in-law certainly did!

Method

Follow these steps to make our Stilton Sausage Rolls

1. 1. Prepare Your Sausage Roll Filling

Preheat your oven to 200°C (180°C fan). Remove the sausage meat from its casings and place it into a large mixing bowl. Add the crumbled Stilton, cranberry sauce, dried sage, and dried thyme. Mix everything together until well combined (easiest with your hands!) – the filling should be evenly speckled with bits of cheese and cranberry.

2. 2. Add the Stilton Filling To Your Puff Pastry

Unroll your sheet of puff pastry onto a lightly floured surface (or just use the parchment that it comes in, rather than dirtying your work surface). Slice the pastry in half lengthways to create two long rectangles, and use a rolling pin to roll out slightly. Using wet hands, shape half of your sausage mixture into a long, even log down the centre of one pastry strip. Repeat with the remaining filling and second strip of pastry.

3. 3. Assemble & Slice Your Rolls

Brush one long edge of each pastry strip lightly with beaten egg, then roll the pastry tightly over the filling to seal. Press the edges together gently with a fork.
Cut each long roll into smaller pieces (you should get 10-12 sausage rolls per larger roll). Place them on a lined baking tray, brush the tops with the remaining egg wash, and sprinkle with sesame seeds and flakey sea salt.

4. 4. Bake & Enjoy!

Bake your sausage rolls in your preheated oven for 20–25 minutes, or until the pastry is golden, crisp, and puffed up. Don’t worry if it looks like the Stilton has leaked out onto the baking tray – there is plenty in there so you’ll still be able to taste it! These stilton sausage rolls are best enjoyed warm, but are also just as tasty eaten cold or reheated in the oven for 10 minutes later on.

How Long Do Blue Cheese Sausage Rolls Keep For?

These tangy stilton sausage rolls are the perfect make-ahead nibble as they keep brilliantly in the fridge for up to 3 days – provided you keep them in an airtight container. Enjoy them cold, or reheat them in a 180°C fan oven for 10 minutes. 

You can also freeze your blue cheese sausage rolls! Either freeze when fully cooked and cooled, or, for the best results, freeze once wrapped and assembled, but not yet baked. Bake them as normal, just adding 5-10 minutes on to the cooking time.
