If you’re looking for the ultimate treat for your next picnic or ‘picky bits’ tea, then you need these sticky caramelised onion sausage rolls in your life. Not only are they absolutely delicious, but they come together in under half an hour with a handful of simple ingredients. 

The best bit? This recipe works for literally any chutney, so you can get creative with different flavour combinations. If you don’t fancy caramelised onion sausage rolls, you could go down a different route with tomato chutney or chilli chutney for example.

Method

Follow these steps to make our Caramelised Onion Sausage Rolls

1. Prepare the Filling

Preheat your oven to 200°C. Then, remove the sausage meat from its casing and add to a large mixing bowl with your filling ingredients – a few heaped teaspoons of onion chutney, a pinch of salt, and finely chopped rosemary, thyme, and oregano. Mix well until combined.

2. Start Assembling Your Rolls

Once your caramelised onion filling is ready, lay out your sheet of ready-rolled puff pastry onto a lightly floured board or work surface. Using a sharp knife, slice the pastry in half lengthways, leaving you with two long rectangles of puff pastry. After wetting your hands (this helps to prevent filling sticking to your hands), take half of your sausage roll mixture and shape to form a long log in the middle of one of the puff pastry sheets. Repeat for the second sheet of puff pastry. Fold your pastry over the filling so that the edges meet, and seal with a fork.

3. Cut To Size, Egg Wash & Garnish

To make your long sausage roll logs easier to slice, pop them into the freezer for 5 minutes. Once chilled, slice into individual sausage rolls. We prefer to keep them bite-sized, but you could simply chop each log in half if you prefer Greggs-style sausage rolls! Once cut to size, egg wash each of your sausage rolls, before sprinkling generously with flaky sea salt and dried rosemary.

4. Bake & Enjoy Immediately!

On a baking sheet lined with non-stick parchment, lay out your finished cheese & onion sausage rolls, and bake them in your preheated oven for around 20 minutes, or until golden brown and crispy on top. Pop your still-warm onion sausage rolls onto your favourite serving platter – don’t forget a bowl of extra caramelised onion chutney for dipping into!


How Long Do Caramelised Onion Sausage Rolls Last in the Fridge?

Our sticky caramelised onion sausage rolls last up to 3 days in the fridge, making them a perfect make-ahead party appetiser. Ensure they are kept in an airtight container to maximise their freshness. Before digging in, allow them to come to room temperature, or, pop them into a hot oven for 10 minutes – they’ll taste as fresh as the day you made them!

Won’t eat your onion sausage rolls within 3 days? Freeze them instead. Simply defrost in the fridge overnight and follow the steps above to heat them in the oven before eating.

Can I Make Caramelised Onion Sausage Rolls in Advance?

Yep – that’s why they make the perfect party appetiser! You can assemble them fully up to the egg washing step, then store them uncooked in the fridge (covered) for up to 24 hours. When you’re ready to bake, simply egg wash, top with your salt and rosemary, and pop them in the oven until golden brown.

Can I Use Store-Bought Caramelised Onion Chutney?

Absolutely – we’re all about convenience here. Look for one that’s sticky, rich, and not too watery, as this will help your sausage rolls stay perfectly crisp and golden. If your chosen chutney features additional flavourings, such as balsamic vinegar, this will add extra depth to your sausage rolls.

What Can I Use Instead Of Onion Chutney?

Love the sticky, rich flavour that chutney gives, but don’t fancy the onion element? The thing I love about this recipe – and making sausage rolls in general – is as long as you keep your puff pastry and sausage meat quantities the same, you can literally add any flavour you like. Try swapping your caramelised onion chutney for:

  • Tomato chutney
  • Mango chutney
  • Chilli jam
  • Fig & honey chutney
  • Apricot jam or chutney
  • Tamarind chutney
  • Or other condiments like mustard, pesto, BBQ sauce, or cranberry sauce
